The anatomy of Bale Dutung is very interesting. Bale Dutung* which means House of Wood has an “extension house” inside it that looks silent from afar. The wooden puppet breaks the traditional look and signals that this spot is something else.
If you would dissect closely, the lower part is purposeful. The owner, Claude Tayag, of Bale Dutung is an artist-chef in the Philippines. His very own Claude’9 Xo (Xtra Ordinary) Chili Sauce is very marketable.
This lower part of the extension house must have witnessed the secret ingredient of the chili sauce. It must be the wooden swing eh? π

love the name of his chili sauce! “claude9!” hehe. the spicy flavor must be enough to launch you to cloud 9! or should it be intensity 9 on the spicy scale? π

Great photos! So that’s how they season the chilis. Interesting. Though it would probably be challenging to control the saltiness during the very hot days. hee hee
